Being as template weapons cannot be fired on overwatch, not a lot really.

However, I still think Tau will do pretty well this edition, moreso than 5th at least. Also, Nox, check your rule book again, flamer weapons do d3 auto hits in Overwatch.

Crisis suits aren't necessarily scary either, with T4, 2 wounds, and a 3+ save. Jetpacks are a wee bit faster, if you roll average or higher, but that doesn't do much, IMHO. A T3 4+ save Fire Warrior isn't super hard to kill either, go ask Eldar Dire Avengers. And with most cover being relegated to 5+, their chances aren't much better.
I've seen well-played Tau. Guard, GK's to some extent, and even Nids when kitted out-right outperform everything but Broadsides, who are too expensive as is.
Tau aren't bad, for sure. This edition gave them a much needed boost. But they still have some major problems (mostly with points costs) that need to be re-worked in the new book.
